I don't know about you, but two of my favorite summertime foods are fresh corn on the cob and ice cream. So I thought, why not put them together? I know it might seem a bit strange to you, but it's actually delicious. It's super easy, creamy, sweet, and oh so good! Are you intrigued? Go ahead, try it. You won't be disappointed. Have a scoop on a cone or make a sweet and salty caramel corn sundae by mixing in some chocolate chips and topping it with vegan caramel and whip cream!
1 can coconut milk
2 ears of fresh corn - shucked from ears
2 T maple syrup
2 t vanilla
1/2 lemon - juiced
pinch of salt
Remove the kernels from the ears of corn, and put into a small pot with the rest of the ingredients. Bring to boil on medium heat, then reduce to simmer for about 5 minutes. Let cool, then pour into ice cube trays. Freeze at least 4 hours or overnight. Put through shoot of Yonanans machine or blend in Vitamix until smooth. You may have to add a little non-dairy milk in the blender. Scoop onto a cone or top with vegan whip cream, chocolate chips, and vegan caramel to make a deliciously sweet and salty treat.
