These smoky sweet green lentils are the perfect side dish to any BBQ cookout. It's a spin on classic baked beans, that's comforting and oh so delicious. It can also be served on a bun as sloppy joes topped with some tangy coleslaw, as lettuce wraps, or over baked potatoes.
Ingredients
1 c green lentils
2 1/2 c water
1 t Low-sodium Vegetable Better Than Bouillon
1/2 large onion - chopped
3-4 cloves of garlic - minced
1 bay leaf
1/2 t liquid smoke (optional)
1 1/2 c barbecue sauce - I like True Made Kansas City because it's low in sugar and sweetened with vegetables
Instructions
Sauté the onion and garlic in your Instant Pot until slightly soft. You can spray with oil or add a couple tablespoons of water so it doesn't stick.
Turn off sauté mode, add the lentil, bouillon, bay leaf, and water and set to manual for 24 minutes.
Allow to release steam naturally. Add in the barbecue sauce. Taste for salt.
